
I love to cook for the South Carolina game. Usually early enough in the season that summer produce is still abundant leads to fresh menus rooted in border state rivalries on and off the field. (Yes, I know, South Carolina grows more peaches than Georgia. Thank you for helping us keep the world supplied with the sweetest of summer sunshine, neighbors!)
This summer, I have enjoyed the recipes of Kardea Brown, a featured chef on The Food Network. Kardea lives off the coast of Charleston and shares her Gullah heritage through Southern classics. Her show, The Delicious Miss Brown, often features her cooking for family and friends and eating under moss-laden oak trees in her back yard or on her screen porch. This is my favorite kind of cooking and entertaining too. So, this week’s menu features a few of her low country – and upstate – recipes for an afternoon of friendly game day celebration.
I’m starting off with Shrimp Burgers. If you are in a hurry the frozen patties from Trader Joe’s are pretty good – especially if you pile the slaw on top, but if you have time, try Kardea’s recipe. And no South Carolina match up is complete without some sort of chicken. This week is a perfect time to celebrate Wing Day. Sauce yours how you like. I’ll probably do a spicy pineapple glaze on some, but I also know there will be some sauced with Carolina Gold Barbeque sauce. Try these.
You can add your favorite Cole slaw or try this one with collard greens and red cabbage!
Finish it off with some pickles veggies of any kind – especially okra – maybe even fry some okra too – and you are set!
